My Turkey Meatloaf Recipe Helps Me Be Healthy & Your Family Will Love It Too
This is NOT your Grandma's meatloaf recipe! But, I it will taste like it!
Growing up in a home of 6 kids and 2 adults my Mom had to be creative to make hearty meals for us on a budget. That meant we were fed healthy and meals were pretty simple. When I moved to New England I learned SO much more about food. I worked in restaurants all through radio college. I worked in a bistro that served up the most beautiful dishes I had ever seen!
Well, my recent blood tests with my doctor show I have high cholesterol. So, one way to help lower that is to eat less red meat. So, naturally I had to start eating less red meat and find substitutes for those red meat meals. I have started to play with recipes that usually use red meat and I improvised with alternative protein options. Hell no I can't do tofu! LOL
I made up my own recipe for Turkey Meatloaf and it is so stupid good. That means.....wicked delicious. So, here is the play by play and recipe!
Pre-heat the oven at 400 degress while you make the loaf.
I cut up one yellow pepper and get rid of the seeds. And, a half of a yellow onion. Saute with salt, pepper, about a tablespoon of Italian spice.
Then, mixing time!
1/2 cup of Ketchup and 3 tablespoons of Dijon mustard
About a cup of bread crumbs and 1 egg. Salt and pepper to taste.
After mixed, shape into a log. Then mix more Dijon mustard and ketchup in a bowl and top the meatloaf.
Cook for about an hour. Check the loaf to see if it's cooked enough. Then take it out and let it sit for about 15 minutes.
Then, cut her up and enjoy!
