My name is Annie Snook, and by accident about five years ago, I was diagnosed with Type 2 diabetes.

If you have diabetes, then you already know what I am going to say. Many people without diabetes can't truly understand how awful it is to have it. It's an everyday struggle to keep your sugars in check, and to prick your fingers for blood every three hours.

AND, we can never eat like normal again.

I splurge here and there, but, I have to be SO careful not to fall into a pattern. My blood sugar levels affect my moods, such as anxiety. I feel so tired all the time, my eyes get blurry, and breaking out in sweats; I wouldn't wish it on anyone.

But, what I miss most is bread. It is so scary how much one sandwich can affect my blood sugar levels. Now, recently there has been a recipe floating around the internet for Cloud Bread. And, let's just say that THIS recipe is changing the lives of diabetics everywhere.

I made the Cloud Bread this weekend at home, and I couldn't believe how easy it was. Only three ingredients, which you probably have at home right now. And, the consistency of how this particular bread is after it's cooked is SO close to bread.
